Salmon Rainbow Rice Bowl

Cooked using the Russell Hobbs Good to Go Multi-Cooker.

Ingredients

  • 2 salmon portions, approx. 250g

For the marinade:

  • 1 tbsp olive oil
  • 1 tsp chilli paste
  • 1 clove garlic, minced
  • ½ red chilli, sliced
  • Coriander leaves
  • Salt and pepper to taste

For the rice:

  • 2 tbsp olive oil
  • 2 shallots, finely diced
  • 2 garlic cloves, minced
  • 1 red pepper, diced
  • 1 yellow pepper, diced
  • 1 green pepper, diced
  • 300g long grain rice
  • 720ml stock, vegetable or fish
  • Saffron
  • Salt and pepper to taste

Vegetables:

  • Carrots, cut into even sized pieces
  • Baby courgettes
  • Baby corn, cut in half length ways
  • Mini peppers

Prep time: 5-10 minutes

Cooking time: allow at least 45 minutes

Cooked using the Russell Hobbs Good to Go Multi-Cooker

  1. Combine the marinade ingredients together and brush over the salmon. Cover and set aside until rice is cooked.
  2. For the rice, firstly select the sear setting on your Good to Go Multi-Cooker and allow to heat. Add the shallots and garlic to the pot and whilst stirring regularly cook for approx. ½ - 1 minute until golden brown. 
  3. Stir in the peppers. Cook for a further 30 seconds.
  4. Add the rice, stock, saffron and seasoning. Combine the ingredients before placing the lid on top of the pot. Select the rice setting on the control panel and allow the rice to cook. Approx. 30 minutes.
  5. Once cooked, remove the rice from the multi-cooker pot and set aside. Make sure the rice is piping hot before serving.
  6. For the salmon, clean and dry the multi-cooker pot before adding the steaming rack. Add water to just below the steaming rack.
  7. Place the marinated salmon and vegetables onto the steaming rack, place the lid on top. Select the steam function on the control panel and steam for 12-17 minutes until salmon is cooked through.
  8. To serve, place some rice in the bottom of serving bowl and top with salmon and vegetables.

Make sure rice is steaming hot before serving.  Reheating in microwave may be required.
