Ingredients

  • 400g tomatillo (green) tomatoes
  • 2 shallots, peeled, roughly chopped
  • 2 jalapeno peppers, roughly chopped – give or take depending on how hot you like your salsa
  • 2 cloves garlic
  • 50g blanched almonds
  • 2 tbsp olive oil
  • 1 ripe avocado, peeled and stone removed
  • 1-2 limes, juice and zest
  • Small bunch coriander
  • Salt to taste

  1. Place the tomatoes, shallots, peppers, garlic, almonds and oil into the jug and pulse until smooth.
  2. Add the avocado and lime then pulse.
  3. Add the coriander, seasoning, and pulse again.
